When is the best time of year to go camping / canoeing in Florida?

I moved to Tampa from Pennsylvania. I enjoy hiking, camping, canoeing .. It's the way too hot for it now in August. When is the best time to go?

I often go camping in the part of year when other people call "winter, November to February the party. We camp at Hillsborough River State Park and Fort De Soto Park. If you want to do outdoorsy things now still can go canoeing or tubing. Another thing that is fun scallop is diving in Homosassa Springs.
